Chunky Monkey Oatmeal, aka my new favorite breakfast: oatmeal flavored with brown sugar and cinnamon, topped with banana slices, toasted walnut pieces, and a whole lot of chocolate!

Guys, long time no see! Having a great summer so far? Man, I feel like I haven’t posted in forever! The past few weeks have just flown by. The Rocking Rebel, Baby Boy, little Lucy and I spent two weeks house sitting at my sister’s place and are now in the middle of a little living room redecorating project. Right now, we’re trying to decide whether to paint the wall behind the couch vintage blue, breezy blue or icy blue. We’re leaning towards breezy blue at the moment. We also took Baby Boy for his first swim in the swimming pool, ate about a dozen fake magnum almonds each, and we’ve been binge-watching Gilmore Girls on Netflix. I actually got the Rocking Rebel hooked on all the drama. Can you believe it? Oh, and I’ve baked, um… not once!

did have a lot of oatmeal, though. So instead of turning on the oven and making a big cake no one would make this time of year, I thought I’d share a recipe for oats again! You remember my Raspberry Oats with Biscoff Crumbs, right? Can you tell I really love oatmeal? It’s pretty much my go-to breakfast because it’s so yummy. It’s also really easy to share it with Baby Boy, who is not only big enough to have oatmeal, but who’s also learned to stand up on his own with minimal support (one hand on the toy box)! Seriously… that kid is strong. I mean he’s just 9 months today

So let’s talk oats. Because they’re yummy. And there’re great with chocolate!

Have you had Ben & Jerry’s Chunky Monkey ice cream? Truth be told, I haven’t. Banana ice cream doesn’t really appeal to me (though I have been meaning to try banana nice cream). It just doesn’t speak to my soul as chocolate ice cream and salted caramel ice cream does.

So no, I haven’t actually had Chunky Monkey ice cream. But I do know it’s banana ice cream with chocolate fudge chunks and walnuts. And to me it seemed those flavors would go pretty well with oatmeal and a cup of tea!

So I took the plunge that wasn’t really a plunge because oatmeal takes 5 minutes to make and made Chunky Monkey Oatmeal. With brown sugar. Because brown sugar.

I just loved it! The warm oats flavored with cinnamon and brown sugar. The fruity sweet banana slices. The toasty walnut pieces. And the chocolate. Yes, the chocolate! Melted and bittersweet and perfect. I also added Greek yogurt, because it’s delicious. Best breakfast ever. Or at least best breakfast I’ve had these past few weeks. It’s soooo good.

Come to think of it, I’ve actually had this for dessert a few times this week too. It’s very dessert-worthy! And, um, kind of healthy, too! I mean, did you know that there are 24 health benefits of eating bananas? 24! I just an article written by Helen Nichols on Well-Being Secrets, and I was very impressed. Apparently, bananas can even help you sleep better. Not that I need any help in the sleep department, after running around my little explorer all day. But still

Chunky Monkey Oatmeal with Brown Sugar

This recipe serves 2, but can easily be doubled.

Ingredients
  • 20g chopped walnut pieces
  • 80g rolled oats
  • 500ml (2 cup + 4 teaspoons) water or milk
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons dark brown sugar, or to taste
  • 150g (about ½ cup) Greek yogurt
  • 1 large banana, thinly sliced
  • 20g (2 tablespoon) chopped semisweet chocolate pieces
Instructions
  1. In a dry frying pan placed over low heat, toast the walnut pieces until golden and fragrant, about 5 minutes, stirring occasionally. Transfer to a bowl and set aside.
  2. In a small saucepan, combine oats, water or milk, cinnamon and sugar. Place over medium-high heat and allow to come to a boil, stirring regularly.
  3. Once the oats have come to a boil, continue cooking over medium-high heat, stirring regularly, until the mixture thickens, 3-5 minutes.
  4. Once the oats have thickened, divide over two serving bowls. Top with the yogurt, banana, toasted walnut pieces and chocolate. Serve immediately.
